Cold weather = soup

I love soup anyway, but something about overcast days and chilly temperatures make a pot of soup a necessity.

Today's venture was vegetable beef, in a completely thrown together, made-it-up-as-I-go-along manner. Veggie beef (or plain old veggie) soup is awesome for that, since you can just use whatever is on hand.

Today's soup:

1 lb beef roast, cut into small bits
~ 2 lbs veggies (carrots, potatoes, celery, mushrooms, tomatoes)
2 cups vegetable stock
2 cups beef stock
~ 1 cup water
Italian seasonings
2 Bay leaves

It turned out so yummy! It even looked good in the stock pot, so I snapped a photo.

Skeeter was his usual soup snob self and refused to eat any though. I didn't fuss though, since he did get my camera hooked up again.

Oh, that does look good! We hardly ever have meat in our soup -- if we do, then it's more like beef stew and we fix it in the crockpot. ;)

But every now and then, especially in the winter, it'll be time to clean out the refrigerator and throw everything in a big pot on the stove for some yummy vegetable soup. We tend to live off of it for days. :)

I love soup! My favorite day is the first cool crisp day of the fall and I make a big pot of veggie stew or chicken tortilla. MMMMM MMMMM Good!
